The great thing about it is that you can use any kind of onion and any kind of root veggie really. Sweat onions of your choice in any fat- I use olive oil, but you could do butter. When they are almost translucent add salt pepper and as much garlic as you like. Then add potatoes or whateverAnonymousnoreply@blogger.comtag:blogger.com,1999:blog-21777131.post-50312329625692142152008-01-10T19:53:00.000-08:002008-01-10T19:53:00.000-08:00oooh, yum. i'll try it. thanks!oooh, yum. i'll try it. thanks!Friskyhttps://www.blogger.com/profile/13895972110506764320noreply@blogger.comtag:blogger.com,1999:blog-21777131.post-41334959644336555082008-01-10T11:48:00.000-08:002008-01-10T11:48:00.000-08:00Carrot-Ginger Soup!Carrot Ginger Soupabout 2 T. ol...Carrot-Ginger Soup!

Carrot Ginger Soup
about 2 T. olive oil
1 medium yellow onion, coarsely chopped
1 small apple, peeled, cored, and sliced
1 rib celery, chopped
about 2 lbs chopped carrots
1-2 inches grated ginger
large pinch thyme
salt and freshly ground black pepper to taste
water or low-sodium vegetable or chicken broth, 5 - 8 cups

Heat Lizhttps://www.blogger.com/profile/06818751028830542516noreply@blogger.com
